Simple Vegan Pancakes

I have to say, these vegan pancakes were the best ones I've made. I've always struggled making cooked pancakes as I've been so used to making raw foods that I just didn't know where to begin with cooked.

For some crazy reason though, these just worked! I'm actually quite proud - which is why they made it online.

I try to limit the amount of oil that I eat, especially cooked oils. However when I do use oil for cooking, for example in this recipe then I would always use avocado oil rather than olive oil or any other. An article I found from explains it better than I could..

Even uber-healthy olive oil can become harmful once it reaches its smoke point, the temperature at which the oil smokes in the pan. When an oil gets to this point, the chemical structure breaks down and creates compounds like lipid oxidation products (LOP) that could compromise your health. Fortunately, avocado oil has one of the highest smoke points out there at 520 degrees Fahrenheit, making it ideal for high-heat cooking.

I never measure ingredients (maybe why they've not worked out in the past) but here goes:


1 ripe banana

1 cup oats

1/2 cup ground almonds/almond flour

1 tbsp avocado oil (plus more for frying)

1 tsp vanilla extract or powder

1 tbsp vegan protein powder (I use revolution foods - although this isn't necessary so you could always miss this out if you don't have any)

1/2 cup plant based milk

1 tbsp Apple Cider Vinegar

1/2 tsp baking powder

Chopped up fruit/maple syrup/coconut yoghurt for topping

- Mix everything together (except for the toppings) in a blender until smooth - add in more milk if its too thick, or more oats if its too runny. You will want quite a thick batter, but it needs to be able to pour out of the jug.

-Heat a tbsp avocado oil in a frying pan.

-On a medium heat pour in some of the batter and use a spoon to spread out to pancake size, approx 10cm diameter, 1/2 cm thick.

-Cook on one side for a couple of minutes then flip over for another minute or so.

-The measurements above made 4 pancakes for me, so increase the quantities if you want more.

-Throw on your toppings and eat immediately!
